The Travel Booking Plugin is part of the theme, it was made by the theme developers. - Can you give a link where you bought this theme?
It is not a Third Party Plugin. - No, this is a third party plugin. We developed our currency converter for woocommerce. And can not be responsible for the functionality of third-party developers

We had them do some custom work a few years ago, perhaps the theme devs made that plugin as an extra custom thing for us.
Do you have any kind of timeline in regards to this fix? Just asking, we appreciate your help.

Sorry I have no idea what they did, it was years ago. Your plugin has worked all this time, we did not implement your plugin until years After any custom work was done, and it has been fine.
So what do we do now then? Just delete your plugin and look for a new one for currency?
We will check the current theme and if the booking is custom functionality we will be forced to reject the adaptation
OK, I guess we will start looking for a replacement plugin for currency then.
