VAT currency not showing in base country currency as well

I'm using this plugin to manage my VAT: WooCommerce EU/UK VAT Compliance (Premium)
And this one they recommend for my PDF invoices: PDF Invoices & Packing Slips for WooCommerce and PDF Invoices & Packing Slips for WooCommerce - Professional
We are based in the UK. VAT invoices in the EU show the VAT in EUR and next to it VAT in GBP as required.
However although the GBP VAT is calculated correctly, the currency symbol is showing as €. With FOX deactivated it shows up correctly. Please see the image below with FOX activated:

My store base currency is GBP, and in FOX the base currency is GBP, and the welcome currency is also set to GBP.

Looks like it's an incompatibility with a third party plugin. You can create a new customization request
