Stripe WooCommerce plugin modification not working.
The support doesn work on Saturdays and Sundays, so some Friday requests can be answered on Monday. Stripe plugin still asking for the currency to be set up (cannot select a lot of payments methods inside stripe plugin because of this)

Unfortunately, I'm not sure I understood you correctly
Our plugin cannot influence bank transactions. For this reason, the payment currency depends on whether your payment system supports the current currency
If I enter Stripe plugin settings to activate different payment methods offered by Stripe, I am not allowed to do so because the plugin does not see EUR as an active currency:
