I think there is a bug with your shortcode. I installed your plugin in my website and if you have a look at e.g. this product: https://www.pronombres.es/producto/pronaming3/ Your shortcode is clickable even if you click 5 paragraphs below it. So my clients can’t click on other links below the drop-down selector. It’s as if the clickable surface was the whole surface of the selector even if it’s NOT dropped-down.

I'd rather not add any extra css, shouldn't the plugin shorcode work properly out of the box?

shouldn't the plugin shorcode work properly out of the box? - Yes, it is possible if all plugins and themes on your site were created by one author.  But unfortunately at the moment we can not track all third-party plugins and themes for wordpress

I'm using WP Astra + Elementor, I didn't think this was an unusual combination.

Yes!  One of a thousand unusual combination.

And it is a combination of one plugin and one theme.

Anyway, just add this CSS to \wp-content\plugins\woocommerce-currency-switcher\css\front.css  - in the next version we will add this code by default
