Hi there,
Is there any way to set set pricing for each product? So that when a person switches between the currencies they see a set price rather than one that fluctuates with the exchange rates?

Yes, this names Fixed prices, you should enable it tab Advanced https://share.pluginus.net/image/i20210910162746.png -> 'Individual fixed prices rules for each product(*)', then set prices for each product for each currency
