Filter by product attribute

We have individual product category called 'attribute:Color' but when I look in the 'Structure' tab I only see Product Color [pa_color] which has no data on my products. Can I get it to filter by this custom attribute which is part of my webtoffee bulk product import csv?

I am also trying to filter by product tag or product theme, for the county category that I am looking at, example, Cork, Mens/Unisex, I don't want to see a tag from Derry or any other county. I have attached the login details. Thanks :)

The colour I mentioned was not set up as a pa_color attribute, but just an attribute name attribute:color in my bulk upload csv file. It appears in the additional information tab of each individual product. Is there a way to filter by text in the information tab, for example I want to be able to filter by Theme or by Color. I don't have products that have variations of colours. See attached.

but just an attribute name attribute:color in my bulk upload csv file - unfortunately the filter(any filter) will not work with this attribute.
This attribute must be a taxonomy for filtering to work.
