I'd like to reproduce a behaviour seen on this demo site. In the main menu, when you go on"Category example" and clicking on"level 2" for example, the shop reloads with the products corresponding to the category set on the link (clothing/man). Also, the WOOF navigation is updated, showing the filtered categories.

Yes! It's correct behavior.
This is a very logical behavior. On the category page, you can show ONLY products that belong to the category OR child category. It makes sense to show only child categories( of the current category ), because clicking on any other category will always give zero products )
