I'm not sure I understand this question
a default currency - If you mean base currency, it should only be one currency for the store. And all product prices must be stored in this currency

Yeah we saw and implemented that. The client though wants to set a default currency for each user.
as some users like more USD then EUR, can she set that somewhere in user settings?

Unfortunately the plugin does not have such a feature
But keep in mind that after the first visit, each user can select a currency, and this currency will be stored for the next visit
