I want to have products displayed after a user clicks on a category name in the filter. Currently only shows a"No products were found matching your selection." response.

Clicking on any of the Items listed under CATEGORIES in the left sidebar produces zero products.
However clicking on the CATEGORY blocks on the right produces a list of the products in the category. I need the sidebar to do the same.
Also want the filter on the left to continue displaying the categories after the filtering is complete.

This looks like a conflict with a third party plugin. Can I disable plugins/theme to test?

It appears to be functioing - put there are a large number of products with the"Images" missing and/or broken links.
Also Is it possible for the"Categories" to NOT disappear when drilling down or when a subcategory is selected?

On the category(taxonomy) page, the filter shows only child categories(taxonomies)
This is a very logical behavior. On the category page, you can show ONLY products that belong to the category OR child category. It makes sense to show only child categories( of the current category ), because clicking on any other category will always give zero products )
