Product filter hide zero products and display issue

i am facing severe issues on my website with products filtering.
my needs are very simple, but it doesn’t work the expected way. Basically I want that:
- Catégories, attributes for out of stock products should be hidden,
- The pagination doesn’t work at all on my website as I have sometimes 5 products on one page, then 2 the next one and then the maximum of 9 or so that is defined.
- I also have want to display child categories under the parent categories to allow users to select directly without having to load one after the other,
Can you please help urgently as it is not effective for the time being and my clients are complaining?

for now it takes into consideration all products even if only half are effectively available. I would like that the count exclude out of stock products.
