Is there any way to pin columns like you can in excel? I have many columns and oftentimes I have to always scroll back and forth between my columns so that I know I am working on the correct product ID.

I do see that, but it seems to only show the web ID and Title. We identify our products via their SKU. Am I able to change the data that shows when I hover over a field?

Unfortunately the plugin does not have such a feature, in this case you need code customization.
