In a set of products, how do I modify 1 category? Without changing the other categories

I have about 1000 products in my store and each product has many different variations.
Is it possible to edit 1 specific variable of a set of products without everything else changing?
For example, imagine that through the filters section I collect 100 products that are totally different between them (different weights, different sizes, different colors, ...) and from that set of products I ONLY want to modify 1 variable (1 category) and put it EQUAL in all other categories and without affecting the other categories. How do I do it?
The problem I have right now with"WooCommerce Bulk Editor and Products Manager Professional" is that when I select a set of products in which I ONLY want to modify 1 category, and everything is modified and not only 1 category.
I actually need to edit the categories, and I do NOT know how to edit ONLY the categories part without modifying everything other categories.
