If I use the woof_products shortcode without any"orderby" option, then my sorting options are working correctly.

If I add a specific ordering in the shortcode, eg:

[woof_products is_ajax=1 orderby='popularity']

Then the ordering is not working. I can select whatever, but nothing gets sorted.

Is there a way to have"popularity" as default sorting but also allowing the users to re-sort with the dropdown?

Thank you! That setting did the trick!

Shame that the"alphabetical" sorting cannot be selected anymore when"popularity" is the default.

But this looks like a woocommerce thing. :)
