How to make work Hierarchy drop-down

I there, i think im still dont get it how to make work Hierarchy, i read your documentation and check the videos but im still stuck.

Im using categories to make Hierarchy field but the second field never show to select the second option, like so:

I think this solution doesnt fit to my needs or im using wrong
