How to change labels on dropdowns?
The support doesn work on Saturdays and Sundays, so some Friday requests can be answered on Monday. Is there a way to customize the labels on the dropdowns the way we can customize the text on the button? Right now, the one dropdown says"select category" and the other says"select post". Is there a shortcode variable that we can put in to customize those?

Unfortunately, the plugin does not have this feature
You can try in file - \wp-content\plugins\taxonomy-chain-menu\index.php - change lines - https://c2n.me/4967BRJ.png AND https://c2n.me/4967LFb.png
