Another strange issue is that on the CookieYes popup that new visitors get, if you reject cookies and then try to change the currency, the website crashes. But only on the homepage.

Looks like you are using Cloudflare and this server does not send the user's IP.
Can you give me ftp access - https://share.pluginus.net/image/i20230222134241.png ->https://share.pluginus.net/image/i20230222134615.png - I will check if the user's IP is passed in another variable

Yes that seems to be detecting the country correctly now... but this string and IP are displaying in several locations which is breaking the appearance of the site (i assume this is from your testing - please remove immediately)
I've disabled the plugin for now because also we cant save pages or view images in the media library with those changes you made

Hi yes that fixed things so that the plugin detects the geo location of the user.
The next issue is due to page caching, in that the currency is selected but all the prices on the website remain as the default currency. For example, the default currency is USD, all the prices on the page show USD even though the selector switched to Euros. How can we get around this issue?
