I can change the delivery time in bulk.
But it is not incorporated in the product.

This plugin only edits data that is stored on the product side

I don't understand.

Delivery Time (Lieferzeit) is inside the product data

 

I can change the Delivery Time ( Lieferzeiten) inside bulk editor, but it doesn't work… on the Product side.

According to the screenshot from the product page, this is meta data, but in the settings it is a taxonomy. It looks like it's just two different data

Yes, it looks like the author of this custom functionality made a mix of data.

Taxonomies are designed to simply store titles(additional info)  and not used for products

For products, meta data is used that stores the taxonomy ID
