By default, you can sort the column by 'ID' and 'Title.' Is it possible to also make the other columns, such as 'Place' and 'Region,' sortable?

Yes its possible, but only in one case if Place and Region is metafields, but if they are taxonomies unfortunately not
Also, remember, after you created new metafields - using bulk editor set default values for all products for this new meta key(s), another way will be displayed only products where meta values are set directly by you, such effect appears when new meta field is added but for all products its not exists
